Rustic & Simple French Tomato Tart Recipe With Puff Pastry
Light, fresh, and flavorful, this rustic and simple French tomato tart recipe with puff pastry is the perfect dish for brunch, lunch, dinner, or even a snack. Slice and salt tomato slices and let them rest for 1-2 hours to release moisture - place on a wire rack.
Line a cooking sheet with parchment paper and roll out the puff pastry. Use a fork to dot holes in the bottom of the crust.
Spread a layer of Dijon mustard all over the pastry.
Grate the cheeses and sprinkle all the gruyere on top of the mustard.
Arrange the tomato slices in a single layer over the whole thing.
Sprinkle the remaining basque cheese over the top of the tomatoes.
Scatter the herbs de Provence over the whole dish.
Bake in a (high heat) pre-heated oven at 425 degrees for 18-22 minutes (mine was done perfectly at 20 minutes).
Let cool to almost room temperature, cut, and serve.
Notes
-Use whatever type of tomato you like and however many fit in the pan you choose.-You can spray the cooking sheet with non-stick spray, use aluminum foil, or rub with olive oil. -Poking holes in the pastry creates a crisp pastry base and allows excess moisture to escape. - For a more golden crust, you can brush the outer edge with an egg wash but I don't find this is necessary.-This rustic French tomato tart is cooked at a high temperature - for the best crust and the development of flavors. - This French-style tomato tart can be customized to your liking. The dijon amount is up to you, as are the types of cheese used and the seasoning.
