Line a baking sheet with aluminum foil, drizzle olive oil, and spread half the seasonings all over.
Take your chicken thighs and "open" them up from underneath. Place them on the prepared sheet pan in a single layer right side up.
Drizzle the tops with olive oil and sprinkle the rest of the seasoning all over the tops.
Put the chicken in a preheated oven on the middle/lower rack and bake for 12-15 minutes until an instant-read thermometer is 155-160 degrees.
Move the chicken to the top rack and switch on the broiler. Leave the door slightly ajar and broil the chicken until the tops are as brown as you like about 5-7 minutes.
Let the chicken rest for at least 5 minutes before cutting into.
