Easy Oven Roasted Potatoes With Rosemary Butter (Oil-Free)

These easy oven roasted potatoes with rosemary butter are sweet, salty, and earthy. They have a crispy exterior and are soft on the inside. It is an easy recipe that begins on the stove infusing butter and rosemary and ends by roasting them in the oven.

Ingredients

  • 1 pound of new potatoes
  • 2-3 tablespoons of salted butter
  • 4 inch sprig of rosemary
  • Sea salt and black pepper to taste

Instructions

  • Begin by washing your potatoes and drying them well with a tea towel or paper towels (which makes them crispier). Slice them into 1/4 inch or so circles or coins.
  • Melt butter in a large cast iron skillet (or oven-safe pan) over medium heat and add the sprig of rosemary. Stir it around making sure it doesn't burn for a couple of minutes. (You can leave it in the whole time)
  • Increase the temperature to medium-high heat and add in the potatoes. Let them brown a little and then flip - trying to keep them in a single layer if possible. Cook for about 6-8 minutes.
  • Put the pan of potatoes into the hot oven and roast at 400 degrees for 15 minutes, flip them over and roast for an additional 10 minutes. Turn on the broiler for about 5 minutes or until the tips are golden brown.
