Authentic And Easy Turkish Bean Soup With Bulgur Recipe

Ingredients

  • 2 15-ounce cans of navy beans rinsed well
  • 1 large onion finely chopped
  • 1 cloves garlic minced
  • 2 tablespoons butter or olive oil
  • 1 tablespoon tomato paste
  • 1 28-ounce can of crushed tomatoes regular or fire-roasted
  • 1 cup bulgur
  • 1 tablespoon sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes adjust to taste
  • Salt and black pepper to taste
  • 6 cups vegetable or chicken broth
  • 2 cups of water
  • Fresh parsley for garnish

Instructions

  • Sauté Aromatics- In a large pot, heat butter over medium heat. Add chopped onions and minced garlic. Sauté until the onions are soft and translucent.
  • Incorporate Tomato Paste -Stir in the tomato paste and cook for 2-3 minutes to enhance its flavor.
  • Add Tomatoes and Spices- Add the chopped tomatoes, ground cumin, paprika, red pepper flakes, salt, and pepper. Mix well to create a fragrant base for the soup.
  • Introduce the Beans- Add the rinsed cooked beans to the pot and coat them with the aromatic mixture.
  • Pour in Liquids- Pour in the vegetable or chicken broth and the water, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for approximately 45-60 minutes. Stir often.
  • Adjust Seasoning- Taste and adjust the seasoning according to your preference. Add more salt, pepper, or red pepper flakes if desired.
  • Serve and Garnish- Ladle the Turkish Bean Soup into bowls. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
